10 Minute Tomato Soup

I had a bulk of cherry tomatoes that I needed to use up before they went bad. I was trying to think of what to do with them and decided that I would make something up on the fly. Maybe a sauce, maybe a soup…I wasn’t sure. So, in went my tomatoes with a little salt, pepper and olive oil into the blender. I then blended some garlic and basil together and mixed that into to the pureed tomatoes. Once it was all mixed together, I decided to pour it into a saucepan and warm it up. I added a splash of cream and had it turned into the most amazing tomato soup ever. I grilled up some grilled cheese sandwiches and we had an amazing comfort food-themed dinner. The soup literally took me 10 minutes to make and it was so incredibly fresh tasting. If you have tomatoes you need to use up, give this 10 Minute Tomato Soup a try!

Ingredients
1 clamshell of cherry tomatoes
2 cloves of garlic
Handful of basil
¼ cup olive oil
Pinch of salt and pepper
Splash of heavy cream
