No Packet Turkey Tacos
We love to make tacos in our house. I try to use turkey as much as possible over red meat and this is the perfect recipe to substitute without losing any flavor. In addition to cutting back on the fat in the meat, I made my own seasoning mix up for the tacos vs using a packaged mix that you buy in the store. Most of those packets are full of sodium and I wanted to try to cut that down by making my own. I have to say the results of these No Packet Turkey Tacos were absolutely delicious and so easy to whip up.
1 pound of ground turkey
3 tbs water
1 tbs red pepper flakes
2 tbs chilli powder
2 tbs cumin
1 tbs onion powder
1 tbs garlic powder
½ teaspoon salt
Over a medium heat lightly spray your pan with non-stick spray. Heat pan for 2 minutes and then put the ground turkey meat into the pan. Brown your turkey meat until it is cooked through and drain any drippings. Put the cooked meat back into the pan and mix all seasonings into the pan with 3 tablespoons of water. Cook until all spices are well mixed and the water has melded with the meat. Scoop the meat into taco shells or top a bed of lettuce and add all your favorite toppings. Enjoy without all the guilt!

Crock Pot Taco Soup
I went to my friend Renee’s party over the holidays and she served this soup. It is delicious, easy and tastes exactly like a taco in a bowl. I had to get the recipe from her to share. I used my gluten free no packet taco seasoning mix that you can find here: http://www.monicapotterhome.com/packet-turkey-tacos/ instead of using a store bought one that is loaded with sodium. I hope that you love this soup and it becomes a regular in your winter rotation.
1 pound ground turkey
1 cup diced onions
1 can beef broth
1 can chili beans
1 can black bean, drained
1 can whole kernel corn, drained
1 can Mexican-style stewed tomatoes
1 fresh diced tomato
1 can rotelle
1 cans diced green chilies
1 packet dry ranch-seasoning packet
1 taco packet or 5 Tbsp. of my no packet taco seasoning
In a skillet, brown the ground beef and onions; drain the excess fat, then transfer the browned beef and onions to a large slow cooker.
Add the no packet taco seasonings (or a store bought packet of taco seasoning), black beans, chili beans, corn, fresh cut tomatoes, rotelle, green chilies and ranch dressing mix (trust me- add it). Cook on low for 5-6 hours.
Serve in my Monica Potter Home ceramic mug and top with sour cream and cheese.http://www.monicapotterhome.com/product/mph-signature-ceramic-mug/
