Summer is starting to wind down and on those really hot, balmy late summer nights, I love to have a refreshing drink on my porch to help me unwind at the end of the day. My garden’s been producing a lot of mint lately, so I thought I’d make some zesty Virgin Mojitos out of them. This mocktail recipe is super refreshing and kid-friendly, so the whole family can enjoy it on a hot summer night!


WHAT YOU WILL NEED

  • 5 mint leaves
  • 1 lime
  • 1 cup crushed ice
  • 1 12oz bottle ginger ale
  • 1 teaspoon raw sugar

Tear the mint leaves into small pieces (the smaller the pieces, the bigger the flavor) and drop into the bottom of your glasses. Cut the lime into thin slices and divide in half, one half for each glass. Sprinkle 1/2 a teaspoon of raw sugar in each glass and muddle (aka, mashing the ingredients with a fork or spoon) the lime, mint and sugar together until the sugar has completely dissolved.

Top off the muddled mixture with crushed ice, then pour 6 oz of ginger ale into each glass. Garnish with a few sprigs of mint leaves and slices of lime, then serve and enjoy!
