This detoxifying carrot juice is my personal favorite mocktail for hitting the restart button and giving my immune system a big boost. Carrots are amazing for detoxifying the liver, blood, and intestinal tract, and balances the pH levels in your body while it’s cleaning up your systems. As a natural blood sugar regulator, carrot juice is a great source of energy midday and keeps you from experiencing those dreaded sugar crashes after lunch. The mango and apple in the juice not only makes it incredibly delicious, they also do wonders for your skin in combination with carrots as all three detoxify your blood and also provide powerful anti-oxidants for your body. Lastly, don’t skip that bit of ginger—it helps with the absorption and assimilation of the nutrients in your body, and also aids in digestion (especially helpful if you’re drinking this at lunchtime).


WHAT YOU WILL NEED

  • 4 carrots
  • 2 apples
  • 2 mangos
  • 2 inches of ginger, peeled

We’re lucky enough in California to have easy access to organic fruits, so in all my cooking, I try to use as much organic produce as possible. If you don’t have access to organic fruits, just make sure that you peel everything before you juice. These ingredients make a great juice (just throw them all in the juicer and let it do it’s thing) as well as a great smoothie if all you have is a blender. If you’re making this into a smoothie, I’d add about a quarter cup of ice cubes to make it more of a treat. Enjoy!
